I have been using Mint and now Fedora for desktop use. I am not familiar with ClamAV yet in this use.
I have several questions on my mind about it, and why not ask now:
What to use as gui? Is there such a thing? With a quick search I saw a non finished one and one for windows.
How big is the performance hit? I guess depends on settings?
What would be good settings for someone that comes from a Win 10 background? I would like to make it work in the background relatively transparently…
Kubernetes is too much. You could set up a matrix server for chat with jitsi for video meetings. Use element as client. Then add your game server(s).

It installs all you need for video, audio, and text chat.
Maybe change the config to be unfederated if you want a private server.
100% uptime is really not feasible so forget that. Even the commercial servers have downtimes.
